Recipe Thursday

Cheesy Egg Muffin
1 dozen eggs, beaten
2 cups lowfat cottage cheese
8 oz grated cheese (your choice)
1 pound meat; bacon, ham, or sausage fully cooked and cut into small pieces
1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1/4 cup melted butter

Grease 2 muffin tins well with shortening (oil or butter will not work!)

Night before: combine eggs, cottage cheese, cheese and meat. Refrigerate overnight.
Next morning: combine dry ingredients and add to mixture. Stir til combined. Stir in butter.
Fill muffin tins until 1/2 full. Bake @ 350 for 20 minutes.
Remove immediately from pan.
Makes 24 muffins


My only complaint about this recipe was how much they muffins stuck to the pan even after using the shortening. It was brought up by my mom to maybe flour the tins and see if that would help.
