Recipe Thursday

Shrimp Pomodoro Pasta
½ cup Balsamic Vinaigrette dressing
1 onion, finely chopped
2 cloves garlic, minced
1 can (28 oz.) diced tomatoes, undrained
2 cups penne pasta, uncooked
1 lb. cooked, cleaned shrimp
¼ cup grated Parmesan cheese

Heat large skillet on medium-high heat. Add dressing, onion and garlic; cook 2 minutes. Stir in tomatoes; cook 12 minutes; stirring occasionally. Meanwhile, cook pasta as directed on package. Add shrimp to sauce; cook 2 minutes. Drain pasta; toss with shrimp mix. Sprinkle with cheese.



I actually couldn't eat much of the dish after preparing it just because of what the shrimp looked like before I peeled them and cut them up, but my husband said it was yummy!

You didn't eat the shrimp? That's the best part. Although, maybe take the shells off before you cook. Those little legs freak me out too. Even worse when you go to a restaurant that leaves the head on....(gag).

I always buy the shrimp pre-peeled. It's slightly more expensive but it's worth not having the gross legs to deal with. I have huge issues eating meat that looks like an animal. (i won't even eat drumsticks because they are identifiable)
